Anzac biscuits have been a classic in Australia and New Zealand since World War 1. Baked by family to send to military personnel serving far from home, the ingredients didn’t spoil easily and stood up well to transportation across countries, continents and the oceans in between. They were also popular at fetes and fundraising ventures to support the troops during war time.

Our favourite version of the classic Anzac biscuit recipe was passed onto me by the mother of a child I taught many, many years ago. And with a few minor tweaks, the biscuit recipe transforms into this tasty Anzac Slice, perfect for lunch boxes, and super perfect if you just don’t have the time to roll and flatten individual biscuit balls!

This recipe is great for cooking with kids – today our 3 years old was in charge of sifting and stirring the dry ingredients while our 7 years old took care of the wet ingredients (with supervision when using the stove).

Fruity Anzac Slice: Add 1/2 cup sultanas (or raisins), dried cranberries or chopped dates to the dry ingredient mix (step 2).

Chocolate Drizzled Anzac Slice: Once slice has cooled, melt white or milk chocolate according to the package instructions and drizzle over the top of the slice. Refrigerate until the chocolate has set. Serve.

Lunch Box Recipe Ideas: Anzac Slice - One Recipe Three Ways

This Anzac Slice Recipe takes the classic Anzac Biscuit and transforms it into delicious slice form.

Ingredients

  • 1 cup plain flour
  • 1 1/2 cups rolled oats
  • 1/2 cup raw sugar
  • 2/3 cup desiccated coconut
  • 125gm butter
  • 2 tablespoons golden syrup
  • 2 tablespoons cold water
  • 1/2 teaspoon bicarb soda

Instructions

  1. Preheat oven to 180˚C (or 160˚C fan forced). Line a slice pan with baking paper.
  2. In a bowl combine dry ingredients.
  3. In a small saucepan combine butter, golden syrup and water and stir over a low heat until butter has melted.
  4. Remove from heat and stir bicarb soda into butter mixture.
  5. Add butter mixture to dry ingredients and combine.
  6. Press the mixture evenly into the slice pan.
  7. Bake for 20-25 minutes, until slice is golden brown. Allow to cool completely in the pan or it will crumble when sliced.
  8. Cut into squares and serve.

Notes
