Cooking with Kids: Easy Beetroot Dip Recipe

What now seems like many years ago I worked in a fabulous child care centre and whenever one of the children celebrated a birthday we would all share together in a special morning or afternoon tea. Dip, crackers and vegetable sticks inevitably formed part of this snacktime ritual, and it is here that a fabulous centre cook introduced me to Beetroot Dip. Beetroot has a natural sweetness, plus beetroot dip is pink, so it was a popular choice amongst the children. Don’t get me wrong, I have one child who loves beetroot and another that won’t even touch it. Fortunately, the one who likes beetroot is also the one who likes dip, the other one runs a mile! This recipe is simple enough to ‘cook’ with kids (with no actual cooking involved) and with just three simple ingredients, it’s a great first foray into the world of pink dip!

Ingredients

  • 1 x 425gm can tinned beetroot slices, drained
  • 1/2 cup sour cream or Greek yoghurt
  • 1 teaspoon lemon juice

Instructions

  1. Combine all ingredients in a hand blender or food processor. Blend until smooth. If your child is new to the flavour of beetroot, you might like to start with only using half the can of beetroot.
  2. Serve with your favourite crackers and vegetable sticks, or spread on toast squares.
