Cooking with Kids: Traffic Light Kebabs

Our girls both love helping when we are cooking dinner, although for one reason or another it isn’t always possible for them to be involved directly with the cooking. So I love finding ideas for other ways they can help, and these traffic light kebabs are a great solution – they make a fabulous, healthy side dish to serve with dinner, they don’t actually need to be cooked and they can be made (or at least assembled) pretty independently by school aged children (younger children will need closer supervision and assistance).

How to Make Traffic Light Kebabs

You will need:

– Bamboo skewers

– Vegetables (and some sneaky fruits) in red, yellow and green;

  • Ideas for red vegetables/fruits: red capsicum/pepper, cherry tomatoes, tomato wedges
  • Ideas for yellow vegetables/fruits: yellow capsicum/pepper, yellow tomatoes, pineapple, banana, cubes of cheese
  • Ideas for green vegetables/fruits: broccoli florets (may be blanched but we eat them raw), cucumber, green capsicum/pepper, celery, avocado, snow peas

Cooking with Kids: Traffic Light Kebabs

To make:

  1. Prepare all vegetables as necessary. Older children will be able to help with the peeling and chopping. Pre-prepare for younger children.
  2.  Thread vegetables onto skewers in a red, yellow, green sequence.

You could also have your kids make traffic light kebabs with fruit for dessert too. Can you think of more red, yellow and green fruits to use?
