Healthy Lunch Box Ideas for Kids: Tropical Whip
This healthy lunch box snack is so simple to make that my three (and a half!) and my eight year old take it in turns to make a batch for the school week ahead! Inspired by the very delicious Berry Whip by Well Nourished, our tropical version is just perfect for my pineapple lovers, and when we pop a small frozen container of this into an insulated lunch bag it is lovely and soft by morning recess time. Immy says it’s the consistency of ice cream!
You will need:
- 2 cups frozen pineapple chunks – fresh or tinned
- Flesh of 1/2 avocado
- 1 medium banana, peeled and sliced
- 5 tablespoons coconut cream (though greek yoghurt works too – it’s just a little less tropical)
- 1 tablespoon of honey
To make:
Place all ingredients into a blender or food processor and combine until smooth.
Serve and eat immediately or spoon into small individual containers (I add 3-4 tablespoons to each container and this mix makes around 6 serves). Freeze individual serves.
Add to your child’s lunch bag with a spoon for a lovely, healthy recess treat.
