Bacon and Egg Muffins

We made these yummy savoury muffins this weekend for morning tea. Being very bacon-y, I think they would be perfect with a mug of hot tomato soup but they are also super tasty on their own. If you are cheese eaters, you could also add a sprinkle of cheese on top for extra yummy-ness! And of course, they are so quick and simple to make that even a child could make them 😉

Bacon and Egg Muffins

Ingredients

2 eggs
1/3 cup vegetable oil
1 cup self raising flour
1 teaspoon baking powder
1 clove of garlic
1/2 teaspoon dried basil
1/3 cup water
Salt and pepper to taste
2 rashers of bacon

Makes 6-8 muffins.

Method

Preheat oven to 170ËšC. Grease muffin tray.

Combine vegetable oil, flour, baking powder, garlic, basil, water, one egg and salt and pepper.

Remove rind from bacon. Chop finely. Add to muffin mix.

Crack the second egg into a separate bowl and whisk gently. Fold through muffin mix lightly, do not fully combine.

Spoon mix into muffin tray. Bake for approximately 40 mins.

Best eaten whist still warm 🙂 Enjoy!

        I made the muffins this morning – my 9 year old granddaughter said, “These are keepers, Gramma!!”

        1. So glad your granddaughter enjoyed the muffins 🙂 Did you end up frying the bacon first? We didn’t but I would be interested to know if you did.

          1. I did fry the bacon first and it tasted fine. I haven’t tried it w/out frying it first. My granddaughter wants me to try it w/other things rather than bacon – sausage/cheese for instance w/cilantro…she’s an experimenter!!

  5. Oh – and do you fry the bacon first? I might, just to get some more of the fat out of it. What do you think? Would that compromise the flavor?

  6. I tried these out this morning with great results! I used a mini muffin pan (all I had) and baked them at 350 degrees Fahrenheit for 15 minutes. I used precooked bacon (about 5 small slices chopped) and added a pinch of grated cheddar cheese to the tops of each one. I think next time I will add a teaspoon of sugar to enhance the flavor.
