We made these yummy savoury muffins this weekend for morning tea. Being very bacon-y, I think they would be perfect with a mug of hot tomato soup but they are also super tasty on their own. If you are cheese eaters, you could also add a sprinkle of cheese on top for extra yummy-ness! And of course, they are so quick and simple to make that even a child could make them 😉
Bacon and Egg Muffins
1/3 cup vegetable oil
1 cup self raising flour
1 teaspoon baking powder
1 clove of garlic
1/2 teaspoon dried basil
1/3 cup water
Salt and pepper to taste
2 rashers of bacon
Makes 6-8 muffins.
Preheat oven to 170˚C. Grease muffin tray.
Combine vegetable oil, flour, baking powder, garlic, basil, water, one egg and salt and pepper.
Remove rind from bacon. Chop finely. Add to muffin mix.
Crack the second egg into a separate bowl and whisk gently. Fold through muffin mix lightly, do not fully combine.
Spoon mix into muffin tray. Bake for approximately 40 mins.
Best eaten whist still warm 🙂 Enjoy!
