Food for Kids: Gluten & Dairy Free Pikelets: Two Recipes

My girls both love to eat pikelets and I love how quick and easy they are to make. Perfect as morning tea, lunch box and after-school snacks, for those in countries unfamiliar with the delight of a simple pikelet – they are like a small hot cake or small, thick pancake. Here are two gluten, dairy (and corn) free recipes perfect for those with allergies or intolerances or those without!

Gluten & Dairy Free Banana Pikelets

Banana fans will love the flavour of this pikelet!

You will need:

  • 1 egg
  • 1 banana
  • 1-2 Tablespoons rice flour (or other gluten free flour)

Makes: 5-6 pikelets

To make:

1. Place a non stick frypan over a low-medium heat. Spray with cooking oil and leave to warm through.

2. Add roughly sliced banana and egg to a hand held food processor or blender. Blitz until smooth.

3. The thickness of the pikelet batter will obviously depend upon the sizes of your banana and egg – ideally your batter should be slightly thicker than a pancake batter or , I find that adding a tablespoon or two of rice flour gives the batter more body but I have made it without. Add the flour a tablespoon at a time and whiz with the processor until smooth.

4. Spoon tablespoons of mixture into the pre-heated frypan. Cook for 1 1/2-2 minutes on the first side, until very lightly browned. Flip with a plastic spatula and cook for a further minute.

5. Allow to cool and serve with your favourite topping. We like ours with honey.

Gluten & Dairy Free Pikelets

You will need:

  • 2 eggs
  • 1/2 cup brown rice flour (or other tolerated gluten free flour)
  • 1/2 cup rice milk (or other tolerated milk substitute)

Makes: 12 pikelets

To make:

1. Place a non stick frypan over a low-medium heat. Spray with cooking oil and leave to warm through.

2. Add all ingredients to a bowl and whisk together until smooth. Let sit for ten minutes.

4. Spoon tablespoons of mixture into the pre-heated frypan*. Cook for 2 minutes on the first side, until very lightly browned. Flip with a plastic spatula and cook for a further minute.

5. Allow to cool and serve with your favourite topping. I love them with warm with melted margarine (or butter if you’re not dairy free).

*My girls love it when I sprinkle theirs with a little pink sugar which I do at this stage.
