Soft Serve for Breakfast! With Bananas, Why Not?

I cannot recall where I first saw this idea for making ‘soft serve’ from frozen bananas (my best guess would be Pinterest) but having given it a try, I think it is awesome. It is so easy and given that it’s school holidays here right now my suggestion to Immy that we make ice cream for breakfast was a hit!

I had pre-cut three bananas into roughly 1.5cm chunks and spread them out onto a lined tray to freeze overnight. Then it was simply a matter of throwing them into the food processor (though I have read that a blender works as well) and hitting start. Process or blend until smooth. By this stage ours had melted a little (more the consistency of a very soft mousse) so as we served each portion we popped it back into the freezer for a few minutes.

The bananas by themselves were perfect for AJ (image at top) but you can easily add other ingredients for a range of flavour sensations. For Immy and myself, I added a tablespoon of cocoa powder and a teaspoon of vanilla essence (play around with the quantities until it is just right for you – I would have loved more of the chocolate flavour but didn’t want to make it too rich for Immy).

Next time I am going to add fresh strawberries as well!

    I did this when my son was about 20 months old and had begun rejecting all fruits and veggies! Worked like a charm! :)

    Yummo...I have been using bananas in breakfast smoothies a lot for the girls but have just realised that they are making them constipated...feel a little bad now but I am very tempted to make this anyway!!

      My little one cannot have too much banana either, Jode. I am sure your girls will love this as a treat, a little goes a long way :)

    I make this with brazil nuts added in the processor too! Delicious and a good protein hit!!

    I make this - but add cocoa to make it taste like chocolate :-) Other added bits include coconut oil, honey, peanut butter or tahini. I once added sultanas and Kaluah for a run and raisin version. It was delicious :-)
