At least that is what I thought when I saw comments made on Facebook about a similar cake. But you know what? It does work! And more than that, you cook it in the slow cooker. No hot kitchen to contend with! Here’s how…

3 Ingredient Banana Cake Slow Cooker Recipe

So the three ingredients, they are bananas, self raising flour and condensed milk. That’s it! It makes for a sweet treat that is a perfect lunch box idea or for afternoon tea. You’ll find the full recipe below, but a few hints and tips before you begin;

  • You need to make sure that your cake tin fits in your slow cooker – I use a loaf tin in our oval shaped slow cooker. Make sure there is also room above the tin for your cake to rise.
  • You’ll see that I mention using a tea towel under the lid. The tea towel stops condensation that forms under the slow cooker’s lid from dripping down onto the cake. People have raised concern with me about this but as the tea towel is nowhere near an open heating element I have no problem with it. That being said, I tend to be home when cooking cakes so the slow cooker is not left unattended.
  • This cake is dense, moist and absolutely divine when smeared with butter! You could also add a cream cheese frosting. Yum!

3 Ingredient Slow Cooker Banana Cake

Ingredients

  • 3 medium, ripe bananas
  • 2 cups self raising flour
  • 1x 400gm tin condensed milk

Instructions

  1. Peel and mash your bananas.
  2. Add flour and milk and mix well.
  3. Grease and line a loaf tin. You need to make sure that your tin fits in your slow cooker - the oval shaped slow cookers work best for this recipe.
  4. Pour cake mixture into the tin.
  5. Add 1/8 cup of water to the bottom of your slow cooker. Sit loaf tin in the slow cooker, drape a tea towel over the top of the slow cooker and then place the lid on.
  6. Bake on high for two hours, or until a skewer comes out clean.

Notes

  • Placing a tea towel under the lid of the slow cooker stops the condensation that forms under the slow cooker’s lid from dripping down onto the cake. People have raised concern with me about this but as the tea towel is nowhere near an open heating element I have no problem with it. That being said, I work from home so our slow cooker is rarely left unattended.
  • Serve slices of cake smeared with butter or ice with a cream cheese frosting.
