These Easy Chicken Skewers are one of the quickest family friendly chicken recipes we’ve tried – you can have them ready and on the table in 20 minutes!
The recipe can also be easily adapted to include any vegetables that your children prefer to eat, or that are in season locally.
Whichever vegetables you choose, I would suggest cutting the vegetable and chicken pieces as uniformly as possible to help ensure they cook evenly.
Use a high quality, organic sesame oil if you can. If you choose to use a non-organic or non-pressed variety of sesame oil (it will generally say on the label) halve the amount mentioned as the flavour from a roasted sesame oil is very strong.
If you use wooden skewers they will need to be soaked in water for a minimum of two hours prior to using to prevent them from burning. Using metal skewers assists the food to cook quickly and more evenly, and they can be re-used over and over again.
I prefer to use an iron skillet pan or BBQ grill to make this meal as it is best to add the prepared chicken skewers to a hot pan.
Kaffir lime leaves provide flavour to the chicken during the cooking. They are not a pleasant texture to eat so remove before eating.
Lemon Honey Chicken Skewers
Ingredients
- 400 grams chicken breast – cut into large cubes
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 2 teaspoons sesame oil
- 1 tablespoon good quality olive oil
- ½ capsicum – cut into squares
- 1 zucchini – cut into rounds
- 100 grams mushrooms
- 120 grams cherry tomatoes
- 8 kaffir lime leaves
- Cooking oil of choice to brush pan
Instructions
- Combine the lemon juice, honey, sesame and oils in a bowl.
- Cut the vegetables and chicken into even sized chunks that are large enough to thread onto the skewers.
- Add the ingredients to your skewers in random order with a kaffir lime leaf after one of the pieces of chicken.
- Brush your pan with a little olive oil to prevent sticking.
- Once the pan is sizzling hot add the skewers and brush or pour on some of the juice and oil.
- Turn the skewers a few times during the cooking to ensure that all of the ingredients are cooked through (about 10 minutes depending on the heat of your pan), add a little more juice and oil as you turn - as the pan is hot it will evaporate fast and add flavour and a caramelised coating to the skewers.
- Serve with salad or vegetables of choice
